A celebration of Cap Classique, legacy and tradition in Franschhoek … Haute Cabrière is renowned for the classical sabrage. And we’re sharing our passion and knowledge with our guests this season.
We’ve been inspired in 2021 to create a series of events to join in the festivities marking the 50th year of producing Cap Classique in South Africa, the French tradition of Méthode Champanoise. The von Arnim family of the Franschhoek wine valley played an important part in the development of Cap Classique in South Africa, and we’re paying tribute all year long.
After a rough year (and a bit), it’s time bring back some ceremony and learn some new tricks to add back some richness to life. You can now join us to learn the dramatic art of slicing off the top of a bottle of Cap Classique with large sabre … something our founder, Achim von Arnim, is famed for. This art of sabrage dates back to the time of Napoleon and, to this day, is a sight to behold. It’s sure to up the ante to you next dinner party, wedding or social gathering (restrictions permitting, of course…).
Before we tell you about this exciting new Sabrage Masterclass, first a little about the wine itself. Haute Cabrière’s Cap Classique range, Pierre Jourdan, is something wonderful. Crafted by many hands on their journey from vine to glass, there is something magical about the tiny, naturally formed bubbles (or mousse) that we simply cannot get enough of. These bubbles can mark the start of something incredible, like a marriage or a birth, or celebrate the end of something achieved such as a degree or, any Friday really – weeks can be hard. And sometimes, having a bottle in the fridge is reason enough to enjoy the light bubbles on your palate, bursting with flavour and finesse. But how to open such a wine with a real bang – we mean, pop?
Cellar Master Takuan von Arnim and Winemaker Tim Hoek are excited to announce (and host) our Cap Classique & Sabrage Masterclass series! ‘We love sharing our wines, from tasting to creating moments and in this case, (safely) teaching the art of sabrage for a limited time only,’ reveals Takuan.
The classes will be hosted by Takuan or Tim, in Haute Cabrière’s underground cellar, in the private vinoteque. With only 8 seats available per session, book fast for this unique experience in Franschhoek, with Haute Cabrière winery and the Pierre Jourdan Cap Classique range. You’ll learn the history of the wine, the sabrage technique, as well as practice with the guidance of knowledgeable hands. Take your skills home with you and surprise family and friends, or bring them all with you for a truly special memory of bubbles, sabres and winemakers.
