Chardonnay is one of those beautiful wine varietals that lends itself to a dynamic array of styles, techniques, places to grow it, and ultimately – ways to enjoy it.
As a grape, Chardonnay is known as both a winemakers’ grape, due to its ability to showcase the nuance of terroir, and as a wine drinkers’ grape, as it can be enjoyed in so many ways. As a wine, Chardonnay can produce a wide range of styles depending on factors such as the climate, soil type, and winemaking techniques used. We explore the shades of Chardonnay throughout our wine ranges at Haute Cabrière. For us, it is a varietal that can be enjoyed in any season throughout the year, and at any time of day depending on the style, occasion and weather. Our motto: Chardonnay, all day!
MORNING:
Sabrage a bottle of the bubbly and beautiful Pierre Jourdan Chardonnay-driven Cap Classiques (the Brut and Blanc de Blancs) for breakfast, lunch, sunset, or dinner. These are wines that can be enjoyed at any time of the day. Add a splash of orange or watermelon juice to the Brut Cap Classique to create the perfect Sunday morning mimosa, or pour a bottle down a tower of champagne flutes for a real ‘wow’ moment at a special occasion. These are wines which need no reason to be enjoyed, and bring a festive spirit to any occasion.
NOON:
Over lunch, we love a glass (or two) of our unoaked and elegant Chardonnay Unwooded, which is loved by Chardonnay drinkers and Chenin fans alike. Our locally-loved and iconic Chardonnay Pinot Noir will take you from lunch, to an afternoon cheeseboard, and into the evening. This pioneering blend was a first-of-its-kind wine in South Africa, created to be a perfect marriage with food and to be consistently enjoyable vintage on vintage.
AND NIGHT:
As the day turns to dusk, we turn to the sophistication and gentle oaking of our recently launched Haute Cabrière Chardonnay Réserve. A thoughtful blend of unoaked and oaked Chardonnay grown in the Franschhoek Valley, this is wine we adore while watching sunset or enjoying a meal together. To end your evening, a glass of the Haute Cabrière Ratafia Fortified Chardonnay is sure to do the trick. Inspired by historic wines, our Ratafia sits somewhere in-between a Noble Late Harvest and a glass of unoaked Chardonnay – not quite a desert wine, but something to enjoy after a meal (or if you’re like Takuan von Arnim, in a cocktail of your own making!).

Created in limited quantities in exceptional vintages from Certified Heritage Vines, the balanced brilliance of the Haute Collection Chardonnay and delicate splendour of the Amphora Chardonnay are each a remarkable experience.
